1 large onion, thinly sliced
2 mangos, peeled and sliced
2-3 lb chicken
2 TBS melted coconut oil or butter
1 tsp sea salt
½ tsp ground pepper
¼ tsp paprika
Pinch of nutmeg
Grated lemon rind
1 cup chicken broth
Juice of one lemon
1 can coconut milk
Lay onions on bottom of baking dish. Lay mango slices over onions. Lay chicken over mango. Mix the rest of ingredients together and pour over chicken. Bake covered for 90 minutes at 350 degrees farenheit.
