3 cups whole grain flour
2 cups whole yogurt
2 eggs, beaten
1 tsp salt
¼ cup maple syrup
2 tsp pure vanilla
3 TBS butter, melted
1 cup shredded coconut
Soak flour and yogurt in warm place for 15-30 minutes. Blend in other ingredients. Bake in muffin pan at 325 degrees for 45 minutes.
