Whole Wheat Pancakes/Waffles

2 1/2 cups whole wheat flour
2 1/2 tsp baking powder (avoid aluminum brands)
1/4 tsp nutmeg
1/2 tsp cinnamon
Pinch sea salt
2 TBS applesauce
1 1/4 cup coconut milk
1 tsp vanilla
1 1/2 cup water
1-4 TBS pure maple syrup

Combine all ingredients in mixing bowl. For fluffier pancakes blend in blender. Cook over medium heat on a non-stick skillet.
